Artichoke Soup

  • 2 cans of ready-made artichoke hearts
  • 1 large onion
  • 2 cloves of garlic
  • 2 tablespoons of butter
  • 1 liter of chicken or vegetable broth
  • 1 cup of milk
  • Salt and black pepper


  1. Wash the canned artichoke hearts in a sieve and dice them into cubes. Dice the onion and mince the garlic.
  2. Take a pot and melt the butter. Add the diced onion and sauté until softened.
  3. Add the minced garlic and continue sautéing.
  4. Add the diced artichoke hearts to the pot and sauté for a few minutes.
  5. Pour in the chicken or vegetable broth and bring it to a boil.
  6. Simmer on low heat until the artichokes are tender.
  7. Blend the soup using a blender or an immersion blender.
  8. Add the milk and mix it again.
  9. Season with salt and black pepper.
  10. Serve hot.
