Artichoke Soup
- 2 cans of ready-made artichoke hearts
- 1 large onion
- 2 cloves of garlic
- 2 tablespoons of butter
- 1 liter of chicken or vegetable broth
- 1 cup of milk
- Salt and black pepper
Instructions:
- Wash the canned artichoke hearts in a sieve and dice them into cubes. Dice the onion and mince the garlic.
- Take a pot and melt the butter. Add the diced onion and sauté until softened.
- Add the minced garlic and continue sautéing.
- Add the diced artichoke hearts to the pot and sauté for a few minutes.
- Pour in the chicken or vegetable broth and bring it to a boil.
- Simmer on low heat until the artichokes are tender.
- Blend the soup using a blender or an immersion blender.
- Add the milk and mix it again.
- Season with salt and black pepper.
- Serve hot.
