Artichoke Hearts in Olive Oil

  • 4 artichoke hearts
  • 1 large onion
  • 3 cloves of garlic
  • 2 carrots
  • 2 potatoes
  • 1/2 cup olive oil
  • 1 tablespoon tomato paste
  • 1 tablespoon red pepper paste
  • 1 teaspoon powdered sugar
  • 1 teaspoon salt
  • 1 cup hot water
  • Juice of 1 lemon
  • 2 sprigs of fresh green onion (for garnish)

Instructions:

  1. Peel off the outer leaves of the artichoke hearts, trim the stem, and remove the choke. Then, cut the artichoke hearts into crescent shapes.

  2. Dice the carrots and potatoes into small cubes.

  3. Finely chop the onion and garlic.

  4. Heat the olive oil in a pot. Add the chopped onion and garlic, sauté until they turn golden brown.

  5. Add the tomato paste and red pepper paste. Sauté for an additional 1-2 minutes.

  6. Add the diced carrots and potatoes to the pot. Continue sautéing for a few more minutes, stirring occasionally.

  7. Add the artichoke hearts to the pot and mix all the ingredients together.

  8. Pour in the hot water, salt, powdered sugar, and lemon juice.

  9. Cover the pot and let it simmer over medium heat for about 30-35 minutes.

  10. Once cooked, transfer the artichoke mixture to a serving plate.

  11. Garnish with finely chopped fresh green onion.

  12. Serve hot or cold.
